“民人以食为天” 把中国人的骨子里的 “美食情节”表现得淋漓尽致 从早春第一杯清茶,到深冬最后一碗热汤 从清晨时的早餐铺,到深夜里的夜宵摊 “吃”横贯四季,纵连日夜 而不同的城市 有着不同的味蕾、不同的温度 这是藏匿在空气里的印记 金华,亦有自己的独特风味 “金”字招牌的“三巨头” 在金华,说到美食,少不了的是被打上了“金”字招牌的“三巨头”——吸饱了日光的【金华火腿】(Jinhua ham);咕噜着热气,鲜掉眉毛的【金华好味道——胴骨煲】(thigh bone broth);岁月的沉淀酝酿出的【金华府酒】(Jinhua wine)。
【金华火腿】声名远播,也是金华人送礼首选。金华本地人普遍爱将它与其他食材一起煲汤,但火腿真正的打开方式应该是水煮。 Jinhua ham is a well-known dish and popular gift in Jinhua. It is commonly used to make soup with other ingredients. However, the best way to cook Jinhua ham is to poach it. 梁实秋的散文集《雅舍谈吃》就有一篇《金华火腿》介绍其做法——以整只火腿浸泡水中三数日,每日换水一二次,刮磨表面油渍,用凿子挖出其中的骨头(这层手续不易),然后用麻绳紧紧捆绑,下锅煮沸二十分钟,以微火煮两小时,然后再大火煮沸,取出冷却,即可食用。煮熟后整块肉红得似火,白得似玉,轻易就能品出松烟的味道,这种香味有些涩涩的,既不像红烧肉那么张扬,也不像北方烀肉那么清纯,有些内敛,口齿留香,回味悠长。 金华煲是金华人款待外来宾客必备的一道美食,是本地名菜,全省独有的美味砂锅炖品,采用二十余味名贵中药材及香料,精心调制而成。目前在江、浙、沪、湘、粤各省市都开有多家“金华煲庄”并极富盛名,其中又属【胴骨煲】最受欢迎。 Jinhua bone broth is used in Jinhua to treat guests and is famous throughout Zhejiang province. It is stewed with more than 20 rare Chinese herbs and spices. There are many "Jinhua broth" restaurants in Jiangsu, Zhejiang, Shanghai, Hunan and Guangdong. Thigh bone broth is the most popular dish. 吃肉哪能少了酒?【金华府酒】是三国时的贡酒、元代《酒小史》中排名第六、明代的“四绝之一”、巴拿马万国博览会金奖的拳头产品。 Jinhua wine was a tribute wine during the Three Kingdoms period (220-280), the sixth place listed in the History of Wine during the Yuan Dynasty (1271-1368), and "one of the four great treasures" in the Ming Dynasty (1368-1644). It won a gold award at the Panama Pacific International Exposition. 金西人做菜有一手名声在外,这里的汤溪“十碗头”最是让人能记住。一口辣、一口臭、一口香、一口糯……每一道都是一个味,保准食之不忘。 Locals in western Jinhua have a reputation for cooking. "Tangxi 10 dishes" are the most memorable. Each dish is either spicy, stinky, sweet-scented, or glutinous. 【烂菘菜滚大头鱼】尽管臭气熏天,却让食客无法拒绝。同样“臭”名昭著还有【烂菘菜滚豆腐】,一碗豆腐必定得吃三碗米饭才过瘾。 Although this dish - rotten cabbage stewed with fish – smells terrible, diners still can’t resist it. The same goes for rotten cabbage stewed with tofu. 相比烂松菜的浓郁,【婺州白切肉】则淡雅许多。对于很多喜欢吃猪肉的人来说,白切肉是一种难得的美食,做好之后蘸着酱油吃,别提多香了。 Wuzhou poached meat is a rare delicacy for pork lovers. It is commonly dipped in soy sauce. 金东有一处古街名曰坡阳街,古街上的“板凳宴”是独一无二的特色,十余道菜均以大豆为原材料,演绎出千变万化的美味,故又名“豆腐宴”。 There's an ancient street in Jinhua's Jindong district called Poyang Street. The "bench feast" is a unique feature of the street, as it has more than 10 dishes made from soybean and cooked using different methods.
