如何做大金华火腿的产业规模是金字火腿股份有限公司董事长施延军多年来的“心病”,12月3日,他给自己的“心病”找到一款“解药”——火锅火腿,即用新开发的淡火腿产品涮火锅。



How to expand the industrial scale of Jinhua ham, a well-known traditional local delicacy from Jinhua city, Zhejiang province which usually comes in the form of a huge preserved pork leg, has been the concern of Shi Yanjun, president of Jinzi Ham Co, for many years. On Dec 3, Shi found the solution – newly-developed low-salt ham to be used in hotpot.


“有了这个产品,火腿的产业链延伸了,应用场景拓展了,产业规模可以比原来增长数倍甚至数十倍。”施延军对新产品信心满满。



"This product can help us expand our industrial chain and increase our industrial scale by a factor of up to 10," said Shi, who is confident about his new products.


金字火腿在金华和杭州组织了火锅火腿品鉴会,邀请餐饮专业人士品尝新产品。



Jinzi Ham organized a tasting session for the hotpot ham in Jinhua and Hangzhou, capital of Zhejiang, and invited food professionals to have a taste for the product.


“我原来以为火腿这么咸,做火锅可能不好吃,但现场尝了以后感觉挺不错。”金华市餐饮业和烹饪协会秘书长刘根华对火锅火腿给予肯定。他认为用新开发的淡火腿涮火锅,在保留火腿风味的同时,还使火腿的口感变得脆嫩,让金华火腿能被更多人接受。



"I assumed that ham would be too salty for hotpot, but Jinzi Ham's new product tastes good," said Liu Genhua, secretary-general of Jinhua Catering Industry and Cuisine Association. Liu is optimistic about the hotpot ham, praising it for being tender while also preserving the flavor of old-fashioned hams and said that it will make Jinhua ham acceptable to more people.


杭州市餐饮界泰斗胡忠英说:“清汤锅更适合淡火腿,一盘牛肉、一盘羊肉、一盘火腿,以后可以成为大家吃清汤火锅的标配。”

——舌尖上的美味

多年前,施延军就有了做火锅火腿的想法,但当时的技术和设备都达不到要求。今年上半年,他得知国外新开发了一种设备,可用于火锅火腿生产。于是,金字火腿投资购买了这套专用设备,并改建一个新车间用于火锅火腿研发生产。经过不断研发,火锅火腿终于研制成功。


金字火腿还专门制定了供应给火锅商家的淡火腿标准,对火腿的含脂量、含水量和盐度进行具体的规定。同时,金字火腿也开发了适合家庭的简便包装,市民在家里也可以直接用淡火腿涮火锅。


Jinzi Ham also formulated standards for low-salt ham to be sold at hotpot stores, affecting fat content, water content, and salt content. Meanwhile Jinzi Ham developed family-friendly low-salt ham, which can be eaten in hotpot at home.


“火腿将不再只是配菜,还可以作为主食。”金华火腿行业协会会长马晓钟说。火锅是餐饮行业中占比较大的市场品类,从配菜到主食的转变,使金华火腿有了广阔的发展前景。



"Ham is no longer just a side dish, but can also be served as a main course," said Ma Xiaozhong, chairman of the Jinhua Ham Industry Association. Hotpot takes up a large share of the food industry in China, and transitioning from side dish to main course creates a promising prospect for Jinhua ham.


淡火腿涮火锅口感有点像培根,但因为经过发酵,比培根更具营养价值。



Low-salt ham tastes a bit like bacon for hotpot, but has higher nutritional value because of the fermentation process.



施延军说,金字火腿研发这款适用于火锅的淡火腿并不意味着将抛弃原有的火腿工艺,而是在传承中拓展创新。目前,金字火腿研发了适合火锅的猪肉火腿和牛肉火腿,还将继续研发适合火锅的羊肉火腿。



Shi said that the low-salt hotpot ham is also produced using traditional manufacturing processes, but with some innovative processing. At present, Jinzi Ham has developed pork-made ham and beef ham suitable for hotpot and will develop mutton hotpot ham.


针对火锅和烤肉,金字火腿开发了许多款不同种类的产品,包括火腿烤肠、细香肠等。“产量目前还满足不了客户的需求,估计到月底,我们的淡火腿产量每天能达到15吨。”施延军说。


“现在金华火腿每年销量是350万条左右,火锅是一个千亿级的市场,如果金华火腿能搭上火锅的顺风车,那将是金华火腿的一次重要突破。”马晓钟说。



"The annual sales volume of Jinhua ham amounts to 3.5 million pieces and the hotpot market is worth 100 billion yuan ($15.25 billion) in China," said Ma, "It would be a significant breakthrough for Jinhua ham if it can tap into the hotpot market."
