On February 18, the tea specialist who works at Wuyi Tangji Tea Company was busy frying freshly picked tea leaves. The entire workshop was teeming with fragrant aroma. It was the day of Rain Water among the twenty-four solar terms.

As temperatures rose, new buds of some spring tea varieties in Wuyi County, the home of Chinese organic tea, appeared a week earlier than last year. Tangji Tea Company seized the chance to pick and fry the new tea leaves. The freshly collected handmade tea had already been reserved by customers the same day.
